I do not have anything on the Jetta, but one of the streams in this series has a section on the Forester. Look at these two:
Exotic steels
Re-enforced B pillars

These two are the Jetta Curtain airbag the canister is mounted under the rear dash and extends into the trunk area.

Hello everybody!
I just want to add that Lee's photos shows the older model of the Jetta. The latest version (since MY 2005) has the inflator in the c-post.
Regarding the question about the rollover protection, both vehicles don't have devices like rollover-protection systems like they are used in convertibles. But they have reinforced B-pillars and floor and roof crossmembers to form a reinforced ring. This is not a new technique but the amount of exotic steels increased in the last years.
The MY 2005 Jetta for instance has an interlayer of Ultra High Strength Steel, some Subarus have steel rods for reinforcement. The purpose of this reinforcements is not only the protection of the occupant in a rollover situation but also in a side impact. There will be more and more of this exotic steels especially because of changed side impact tests such as the IIHS side impact test with a raised barrier (simulating the impact of an SUV without hitting the rocker panel).
Here is a link with some informations about this test, that also illustrates the role of the b-pillar and the good influence of side curtain airbags (that now also acts as a rollover protection system on a lot of the latest SUVs because a rollover sensor deploys these bags).
