I just received a book from the Society of Automotive Engineers. The title is "Fundamentals of Crash Sensing in Automotive Air Bag Systems." It covers the history of air bags; how the sensors work, both mechanical and electronic; side impact sensors; and much more.
It does not go into how to deactivate them, but it will give you a better understanding of how they work.
It does get a litle technical(the propeller heads were in there own little world) in some spots (crash analysis...) but overall it provides an excellent basis for your air bag education. Around $50. It is on the SAE main page. SAE.org
