when a fire explorer goes on a ride along with the ambulance, does the explorer get to help on the ambulance and can you help at the hospital?

Nobody here can answer that question. That depends on each department's individual rules for what explorers/juniors can and can not do. There is no nationwide standard for this. So the answer is maybe.Even the burger-flippers at McDonald's probably have some McWackers.

Here, our Jr. FFs can ride on the Ambo once they get their Certified First Responder card (a class which our department offers 3 times a year). Since this is a state recognized (and EMS system recognized) level of EMS training, they can participate in patient care upto their level of training. Most of our Jr. FFs go on to get their EMT-B during their time with us, and at that point they may operate as EMT-Bs. The vast majority of the medics on our ambos are very good about working with them, and when they get their EMT-B, they get to be the "lead" on BLS calls (with close supervision, of course....and obviously they're not once the call goes ALS).

Even us, as Medics, do almost nothing once we get into the ED, except 1) move the patient and associated lines/ O2 supply or 2) continue to provide compressions/ventilations if it is needed for the patient, until hospital staff can take over.
