I have always been taught to say Sir or Maam, or MR. or Mrs. when talking to older people. How much older should a person be to use this kind of grammar? 10, 15, 20 year ago differnce. Just wondering.

wouldn't that be JimBob then, no seriously if they are older than you are I would use the polite thing goes a long way.

When it comes to the job, I would say anyone above the age of 18 deserves a Sir or Mrs etc. It shouldnt matter how old you are.
